Supermarket spice was ground months ago, an ocean away from the vine. Ours is harvested by smallholder farmers in the Western Ghats — most working plots under two acres, walking rows their grandparents planted — dried the same week, and packed to order. What reaches your kitchen still smells like the hillside it came from.
